Cauliflower Curry with Hot Sauce – Vegan Recipe in 40 Minutes

Today it's a delicious cauliflower curry – and the right hot sauce is the finishing touch. The Caribbean Dancer Chili Sauce made with mango and yellow habanero is simply a perfect match here. Ingredients (for 4 servings)

The best dishes come with a manageable ingredient list – the flavour is anything but simple. For this cauliflower curry you need:

  • 1 cauliflower
  • 400 g strained tomatoes
  • 400 ml coconut milk
  • 3–4 tsp Caribbean Dancer Chili Sauce
  • 1 onion
  • 1 piece of ginger (approx. 2 cm)
  • 2 garlic cloves
  • 1 tsp yellow curry paste
  • 2 tsp curry powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 pinch of brown sugar
  • Salt & pepper
  • 2 tbsp coconut oil
  • Lime juice

Preparation

Step 1 – Prepare the cauliflower

Divide the cauliflower into florets, wash and pre-cook for about 3–5 minutes. This keeps it nicely firm when simmering later and allows it to absorb the flavours of the sauce perfectly.

Step 2 – Build the flavour base

Peel the onion and garlic, peel the ginger and finely chop everything. Heat the coconut oil in a pan, sauté the onion, garlic and ginger for about 3 minutes. Add the curry paste and all the spices and briefly toast them – this brings out their full flavour.

Step 3 – Build the sauce and simmer

Add the strained tomatoes, coconut milk and pre-cooked cauliflower. Simmer everything for about 15–20 minutes until the cauliflower is cooked and the sauce is beautifully creamy. Cook the rice according to the packet instructions in the meantime.

Step 4 – Season with the hot sauce

Season the curry with salt, pepper and the Caribbean Dancer Hot Sauce, then balance with a pinch of brown sugar and a squeeze of lime juice. Now just serve with jasmine rice and flatbread – done.
