Spicy Jerky: How to Make Beef Jerky Really Hot

As Pikantistas, we like it hot, of course. Beef jerky is perfect for that, because a spicy marinade goes very well with beef. I have made jerky myself, so far in the oven. The best way is the dehydrator, I have seen that for myself. You don't have to change your basic recipe at all, you just add chili.

The four ways to heat

  1. Cayenne or chili flakes: 1 to 2 tsp in the marinade. The simplest option and good for getting started.
  2. Chipotle powder: Smoky and deep, goes well with beef. Medium heat.
  3. Habanero powder: Fruity and clearly hotter. For everyone who really wants to know.
  4. Carolina Reaper: A small pinch is enough. As a starting point ¼ tsp for 500 g of meat. You can find the Doctor Salsas powder here: Just Chili Carolina Reaper Powder.

Tips

  1. Wear gloves when you work with hot powders, and don't touch your eyes afterwards.
  2. Taste the marinade first, then the jerky after drying. The heat gets stronger because it concentrates while drying.
  3. How hot a chili is, you can see in the Scoville scale. You will find suitable varieties in the chili variety encyclopedia.
  4. The basic marinade, temperatures and safety notes are in our beef jerky recipe. More about the origin in the jerky guide.
