In the Black Garlic, CaJohn's Fiery Foods combines fermented black garlic with red Fresno chillies. Sweet soy sauce and brown sugar add a deep, caramel-like savouriness, apple cider vinegar brings freshness, and garlic and cayenne round it off. The result: a dark, full-bodied sauce with lots of umami and a pleasant, mild heat.
The Pikantista, honestly: I have often found black garlic in sauces a bit odd – this is one of the few that really works with it. The umami flavour is different, but cool different.

This is possibly the best chilli sauce I've ever had, loads of fruit from all the berries, and a real kick from the Scorpions. Particularly good with wild boar and venison.
