Capsaicin Mutation: Why the Reaper is Hot Everywhere

In most chili peppers, the bottom end of the pod is the mildest. The highest heat is found in the placenta – the whitish tissue to which the seeds are attached. This tissue produces the capsaicin, the compound responsible for the heat. However, the Carolina Reaper has a mutation: here, capsaicin is produced not only by the placenta but by the entire inner wall of the fruit.

So, the tip to taste the bottom end applies to most chilies – but hardly to the Carolina Reaper. It is practically equally extremely hot everywhere. Pikantista, you have been warned!
